To split the internal bonds of a large molecule such as a protein, a catalyst is needed. Furin is an enzyme which has this capability. The Furin site (which is where the molecule is broken) allegedly is how they're making the synthetic viruses infectious and pathogenic to our cells. My guess is software algorithms greatly reduce the time it takes to figure out where to make the cleavage.
