They recently lowered their pilot standards and health standards so no, I want two pilots for sure

Three, at least! One or two as backups in the cabin. And never again lock the cockpit door! In fact, keep it open so we can see what they are doing! Use plainclothes Air Marshalls for security instead.

The locked door is so nobody nefarious enters the cockpit and we already have air Marshalls on some flights.

FAA changed ECG/EKG range on Oct 24 2022. Questionable (bad) hearts authorized to continue flying. So SADS.

Never!! There should always be 2 pilots or a pilot and an engineer. The FAA would never approve this!
